Giada’s Arugula Pesto

Everyone needs to stop what they’re doing and make this pesto! So flavorful. So easy. I’ve been growing arugula this summer, and knew this would be perfect. I mixed this with a box of pasta and topped it with some grilled chicken- voila! Instant delicious dinner.

Makes 1 cup

Ingredients:

  • 2 cups packed fresh arugula
  • 1 garlic clove
  • 1/2 cup olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon pepper, plus more to taste

Directions:

1. In the bowl of a food processor, blend the arugula and garlic until finely chopped. 

2. With the machine running, gradually add the oil, processing until well blended. 

3. Transfer the pesto to a large bowl and stir in the Parmesan cheese, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Season with more salt and pepper to taste.
