King Caesar Sandwich

So apparently when I leave my husband on vacation, he comes up with genius recipes. Who doesn’t love a good chicken Caesar salad? Why not make it into a sandwich? I’m amazed at the flavor of this dish.


  • Two chicken breasts, pounded out into 1″.
  • Brioche buns – 4
  • Boston lettuce
  • Caesar dressing – we like Brianna’s
  • 1 cup croutons, crushed into breadcrumb consistency
  • 2 eggs, beaten
  • Parmesan shavings
  • Olive oil
  • Optional- red onion, tomato and bacon would be delicious on this!


  1. Pound your chicken until about 1″ thick. Season with salt and pepper.
  2. Dip into beaten eggs then coat in croutons.
  3. Fry in warm olive oil – 3-1/2 minutes per side.
  4. Once finished, place on paper towel to absorb excess grease.
  5. Assemble! Smooth over some dressing on your bun, top with Parmesan, lettuce and your chicken! Voila!
